AUTUMN is approaching!

Not only are we switching to our Autumn-Winter varieties (Mixed Game, Walnut and Forager replace Spiced Walnut, Hazelnut & Champagne and Fennel until next April) we are also delighted to announce a few changes and a new arrival.

A new  TRUFFLE salami made using Italian black truffles and from our own Forest pigs. It is absolutely delicious and a new favourite amongst our tasters. £10 each.

We now offer two ranges: a Premium Forest Range (from our own Forest reared pigs) at £10 each and a Free Range (from local  traditional breed free range pigs) with the latter being slightly cheaper at £8.50 each.

We are also offering a new Charcuterie Platter at £9 – a selection of our finest products sliced and ready to serve. Perfect for a picnic or easy to serve antipasta course.

Other news…

We were delighted to host the Harrods Gourmet Food Academy during the Summer for tuition in the art of Charcuterie and we are Product of the Month on the Harrods Charcuterie counter this month.

We will be at Ludlow Food Festival this weekend (12-14 September), Abergavenney Food Festival (20-21 September) and BBC Good Food Show at the NEC (27-30 November). Hope to see you there and apologies to any of our regular markets that will be missed on these dates.

Wow – welcome Shrewsbury Food Festival’s debut year. Put it in your diary for 2014 – it was amazing. Organised by the same people as Ludlow Food Festival in the beautiful Quarry Park in the heart of Shrewsbury. A huge success!

We have been named Start Up Business of the Year in the Regional Countryside Alliance Awards! This is involves a trip to the House of Lords for a drinks and canopies reception. Perhaps we should take some salami to add to the spread?  As it is on Harvey’s 9th Birthday he has been given special permission for a day off school to come too, and rightly so given his 4.30am starts to go to markets in London with his dad! Looking forward to meeting all the other businesses from around the UK also given awards by the Countryside Alliance.

We received an amazing email from an Italian in Wales ……..

Hello there

 Very many compliments for your products. I am an Italian retired in Wales and had the opportunity of happy spending spree around Abergavenny including your stand, I then purchased 3 more the other day.

They are fantastic, though I am not quite sure in which space you let them do their seasoning, (must be very dry): the quality is exceptional and I thought I should let you that.

 In Italy everything which is at that level is usually as dear as yours. Accepted! The area where I come from (Lake Como) is full of natural caves with lots of draft, here they could be built underground with the help of a stone mason.

 What I found surprising is that you have managed to create a better product in UK than the same usually found in France or Italy.

 I hope you can offer in future that type of “felino” size (the town where that famous salami comes from originally) usually long and thin weight between 350 and 500 grams. When I look at your web there could be a little more, I do not mean Parma Ham type of product but maybe goat and sheep cured meat is small enough to be sold in one piece.

In any case people like you make Britain change for the better.

🙂 NEW REDUCED DELIVERY COST – Having reviewed our customers shopping habits it appears that many of you order under the free delivery threshold so we have decided to reduce delivery charges to a fixed £3.95.  After VAT this gives us £3.29 and it actually costs us £5.70 to send most items next day, but this seems reasonable and hopefully allows you to purchase as much or as little salami and charcuterie as you really want. 🙂

 

SADLY 🙁 We have had to take Forest Black Bacon off our product list – due to EColi rules we cannot use the same vac-packer and slicer for bacon as for salami and ready to eat air dried meats. We are sticking with pancetta but it will arrive wrapped in greaseproof. We simply cannot justify a set of machinery just for bacon, so our loins will now all be air dried as lomo!

The Food Festival Season has been going really well. We started with Ludlow at the beginning of the month, then we won Best New Producer at Abergavenny Food Festival, this weekend it is the Real Food Festival at Southbank London (28-30 September). Hope to see you there! 🙂

Tuesday 8 August:

Wow, our charcuterie has been awarded 4(!!) Golds in the Great Taste Awards, 2 of them 2 star. The salami that we entered were:

Rustic  Salami – 2   STAR  award

Comments: Gorgeous, really good quality, full flavoured pork perfectly balanced with the other ingredients.
A really good example of artisan charcuterie at its best – intelligent use of flavourings, excellent fermentation and maturation processes.

Spiced Walnut Salami –   2 STAR award

Comments:  Visually beautiful, with lovely visible walnut. Great taste and texture. The aroma is strong but not overpowering, very pleasant to eat, with remarkable length, and just the right amount of heat. Overall a fantastic product

Forager  Salami  –  1 STAR award

Chorizo  –  1 STAR award

Needless to say – we are blown away thrilled!

Thursday 12 July:

This weekend (14 July 2012) we are selling our british charcuterie at Mortimer Food Fair at Brampton Bryant. This was a fantastic event last year, very quaint and lots of fun.  Local Herefordshire celebrity JOHN CHALLIS  will be opening this year’s food fair and then will be in conversation talking about his new book, his life and his love of  the Welsh Marches. Sally and son Harvey aged 8 will also be setting up stall at the Cleobury Country Fair on saturday 14 July 10 – 1pm. Come along and support the young entrepeneur!
